Tomato Basil Soup




Ingredients:

5 roma tomatoes chopped
1 red onion chopped
1 small garlic clove(optional)
1/2 tsp ginger minced
1 tsp brown sugar
1/2 cup basil leaves + 1 tbsp chopped, for garnish
salt and pepper to taste
1 tbsp oil
1 tbsp cream(optional)

Method:

Heat oil in a pan, add the onion and brown sugar. Saute until the onions are caramelized. Add the ginger, garlic and saute for a minute. Add the tomatoes, salt and pepper and simmer for 20-25 minutes until the tomatoes are soft. Allow to cool. Blend the mixture along with basil leaves until smooth. Sieve through a strainer, so there are no lumps. Before serving, warm the soup and garnish with chopped basil leaves and cream.

Thanks for the recipe ... by the way no need to cook the basil leaves is it ... just add the basil with cooked tomatoes and grind it.

Yeah you dont need to cook the basil leaves, once it cools down you add the basil leaves and grind.
